Brown rice-zucchini casserole

Standard

mix in bowl:

4c of cooked brown rice
1 big tomato (cubed)
1 medium onion chopped
1 big zucchini chopped
1tbl olive oil
1tsp garlic powder
salt and pepper to taste
2tbl Parmesan cheese (optional)

* pour onto baking dish and bake at 375 for 45 minutes.
