Baked carrot chips with tahini& avocado dip

This is a very simple yet super delicious snack or lunch idea. 3 ingredients and you’re good to go! I used 6 carrots as I had this for lunch today, but you can obviously vary quantities.

The dip is made from tahini, which is a paste made from ground sesame seeds. It has a great nutty flavour and it is a good source of calcium, protein and various vitamins!

To make the carrot chips; wash and cut the carrots into fairly thin slices. Toss in a teaspoon of olive oil, pinch of pink himalayan salt & a little cumin.
For the dip, simply mash half a ripened avocado and add 2 tablespoons of tahini, 2 tablespoons of water and a squeeze of lemon juice. I then topped with chia seeds for extra crunch.
